Can sodium metabisulfite be used as a reducing agent? What are its hazards?

Sodium metabisulphite(SMS) is a reducing agent for the modification of the strength of the gluten in doughs. It causes the gluten to become more extensible and less elastic and so reduces shrinkage of the dough pieces during baking. Sodium metabisulphite (SMS) is still the most conventionally used additive to prevent melanosis in crustaceans, despite its hazardous nature to human health and not completely effective activity. Sodium Metabisulfite can affect you when breathed in.Contact can irritate the skin and eyes. Breathing Sodium Metabisulfite can irritate the nose,throat and lungs causing coughing, wheezing and/orshortness of breath. Sodium Metabisulfite may cause an asthma-like allergy.
