MgCl2 and GDL, which one should be chosen as the tofu coagulant?

Magnesium chloride (MgCl2) and D-(+)-Glucono-1,5-lactone (GDL) are the two most widely used tofu coagulates in commerce. As compared with the MgCl2 tofu, the tofu induced by GDL was softer with higher moisture and denser microstructure. It slowly releases gluconic acid, which causes proteins in soy milk to coagulate gently, resulting in smooth, soft texture.
