Agar is a gelling hydrocolloid derived from marine seaweeds and is vital in the structural features of the cell walls of red seaweeds. The first commercial application of agar was used in a culture medium of microbes such as bacteria and fungi. Seaweeds like Gracilariales and Gelidiales are the chief source of agar. Agar is used in biotechnological researches such as in chromatography, electrophoresis, medical (anticoagulant) and dental health care as impression materials applications.
