Gallic acid (GA) is a phenolic compound abundantly found in various plants such as tea leaves, oak bark, or the galls of some trees and shrubs, as well as in some foods such as walnuts, apples, strawberries, pineapples, bananas, blackberry, lemons, or grapes. Gallic acid is generally obtained in both free and conjugated forms, either as an ester or as derivatives of catechin (catechin gallates).
