Potassium carbonate (K₂CO₃) is a potassium salt used as a food leavening agent. Like bicarbonate of soda (NaHCO₃), it possesses leavening properties and is commonly employed in the preparation of gingerbread, cakes, and similar foods. As K₂CO₃ may impart a smoky flavour in food preparation, baking soda is frequently substituted. When replacing K₂CO₃ with baking soda, a reduction of approximately 15-20% in quantity may be required, owing to baking soda's greater reactivity (4.8g NaHCO₃ provides equivalent leavening power to 7.89g K₂CO₃). Furthermore, potassium bicarbonate (KHCO₃) serves as an optimal substitute for potassium carbonate, typically used in a 1:1 ratio. In baking, KHCO₃ is the preferable choice as it provides similar alkalinity without imparting a potassium soap flavour.
