Citric acid is the most widely used acidulant. It has a fruity character blended with fruit flavours. For example unripe lemon contains 5–8% citric acid, associated with malic acid in apple, apricot, blueberries, cherries, gooseberries, peaches, plum and pears; with isocitric acid in blackberries and with tartaric acid in grapes.
